    Glutinous Rice Flour Recipes

    What is glutinous rice flour?

    Glutinous rice flour, also known as sweet rice flour (shiratamako) or mochiko flour, is a type of flour made from ground short-grain sweet white rice.

    Despite the name, glutinous rice flour is gluten free.

    This flour is referred to as ‘glutinous’ because of the consistency and texture it becomes once cooked.

    When cooked, glutinous rice flour produces a gluey and sticky consistency.

    Often, glutinous rice flour is used in Asian sweets, such as mochi (rice cakes), and dumplings.

    But there are so many more uses for glutinous rice flour such as in pancakes, batter for fried chicken, and even pretzels.

    Glutinous Rice Flour vs Rice Flour

    Despite their similar appearance, glutinous rice flour is different from rice flour.

    One of the main differences between these two flours is the way that it is made.

    Rice flour is made from medium grain or long grain white rice. Glutinous rice flour is made from ground short grain rice.

    Rice flour is often used in pastries, cakes, or even noodles. When cooked, rice flour has a cake-like texture, which differs from the chewy and sticky texture of cooked glutinous rice flour.
