    You’ve heard of overnight oats, but have you heard of overnight rice flakes? Don’t let the unfamiliar name turn you off. These delicious breakfast bites are just as good and are simple to make.

    This recipe for overnight rice flakes is no fuss and takes little time to prepare. When you are ready to eat, you can top your rice flakes with almost anything you want!

    What are rice flakes?

    You may be wondering what rice flakes are. I certainly was when I first heard about overnight rice flakes!

    Rice flakes are made when rice is partly cooked by boiling. Then the rice is flattened into dry flakes.

    There are a many different kinds of rice flakes. From brown rice flakes, white rice flakes, and even black rice flakes. Any kind of rice flakes can be used for this overnight rice recipe.

    Rice flakes can be used for cereals, snacks, or even as a dessert.

    The reason rice flakes work so well in this recipe is because they are dry.

    When you leave the rice flakes in liquid, such as milk and yogurt, overnight, the rice flakes absorb the liquid and become soft.

    What makes this different from overnight oats?

    The way you make overnight rice flakes is the same way that you make overnight oats. Both recipes are super simple to make.

    The only difference between the two is one uses oats, while the other uses rice flakes.

    As with overnight oats, you can make any flavor combination you want.

    Unlike overnight oats, overnight rice flakes taste the best on the day it is ready to eat (overnight).

    If you leave the rice flakes any longer, they start to become dry and do not have a very pleasant texture.

    • Rice flakes: In this recipe I used brown rice flakes, but you can use any kind of rice flakes that are available to you.
    • Milk (of choice): I like to use unsweetened rice or almond milk.
    • Plain yogurt (dairy or non dairy)
    • Maple syrup or honey (or sweetener of your choice added to taste)
    • Chia seeds or basil seeds

    Instructions

    This recipe makes 1 serve (1 glass) of overnight rice flakes. The ingredients can be easily multiplied to make how much you need.

    1. Combine all ingredients in a mason jar or large glass. Mix well.
    2. Cover and store in the fridge overnight.

    You can top these overnight rice flakes with anything you would like.

    Storage

    Once you have made these rice flakes, you can store them in the fridge for 1 to 2 days. After this I found the texture of the flakes began to change and was not so pleasant to eat.

    For this recipe, you do not need to cook the rice flakes.

    Do I need to wash my rice flakes?

    No, you do not need to wash your rice flakes before use.

    How long do rice flakes have to soak?

    Ideally, overnight is the best time frame to soak rice flakes.

    But, if you are short on time it is best to soak the rice flakes for at least 4 hours (or until they are softer).

    • ½ cup (40 grams, 1.40 ounces) rice flakes
    • ½ cup (120 ml, 120 grams) milk of choice
    • ¼ cup (60 grams, 2.12 ounces) plain yogurt dairy or non-dairy
    • 1 ½ teaspoons maple syrup or honey or sweetener of choice, added to taste
    • 1 ½ teaspoons chia seeds or basil seeds

    Instructions
     

    • Combine all ingredients in a mason jar or large glass. Mix well.
    • Cover and store in the fridge overnight.
