Instructions
This recipe for cilantro lime rice in the Instant Pot serves 4. The ingredient quantities can easily be adjusted to suit how many serves you need to make. Note – the Instant Pot requires a minimum of 1 cup of liquid to cook.
Step One: Rinse your rice until the water runs clear. Completely drain off all water. Set aside.
Step Two: Turn on your Instant Pot to saute mode. When the inner pot is hot, add the vegetable oil, minced garlic, and basmati rice. Saute for 1 to 2 minutes. Press cancel on your Instant Pot.
Step Three: Add the water, lime zest, and salt. Mix together. Taste for seasoning, add more salt if desired. Make sure no rice is stuck to the bottom of the pot.
Step Four: Close the lid of the Instant Pot and place the steam release valve in the sealing position. Select Pressure Cook, high pressure, for 3 minutes. The Instant Pot will take about 5 to 10 minutes to come to pressure. After this, it will start to count down.
Step Five: When the cook time has finished, press cancel. The screen should say OFF.
Step Six: Allow the Instant Pot to naturally release pressure for at least 10 minutes (or until the silver pin has dropped). After 10 minutes, you can quick release (manually release) any remaining pressure by turning the steam release valve to venting.
Step Seven: Remove the lid of the Instant Pot when all pressure has been released and mix in the chopped cilantro and lime juice. Serve.

- It is important that you rinse and drain your rice before use. This removes starch from the rice so that when the rice is cooked the rice turns out fluffy, and the grains separate.

- Add a bit of heat to your rice by mixing through some finely chopped chilli.
