- 2 tablespoons vegetable oil
- Small (90 grams, 3.17 ounces) brown onion finely chopped
- 1 (85 grams, 2.99 ounces) Chorizo fresh or cooked (dried)
- 100 grams (3.53 ounces) Bacon cut into pieces
- 1 teaspoon Minced garlic
- 200 grams (7.04 ounces) mushrooms sliced
- 3 cups (360 grams, 12.69 ounces) cooked basmati rice day old preferred
- ⅓ cup (40 grams, 1.41 ounces) frozen green peas defrosted
- ½ cup (40 grams, 1.41 ounces) spring (green) onions finely chopped
- Salt to taste
If using fresh chorizo, peel the skin and mince the chorizo. If you are using dried chorizo, cut the chorizo into slices.
Heat vegetable oil in a wok or deep frying pan over high heat. Once hot, add the finely chopped brown onion, chorizo, and bacon pieces. Cook until the onion starts to brown and the chorizo and bacon starts to crisp. Add minced garlic and and mushrooms. Cook for a further 3 to 4 minutes or until the mushrooms have reduced and become a darker color.
Add the cooked basmati rice. Break up any clumps of rice and stir through the meat and onions. Stir fry for 3 to 4 minutes.
Add the green peas and spring (green) onions. Cook for a further 3 to 4 minutes.
Season with salt to taste. Turn off heat, and serve.
- Use high heat when making fried rice. This will cook the rice better.
- If you find your ingredients sticking to your pan when cooking, add a bit more oil.
