Matcha Mochi Waffles

Matcha mochi waffles are a delicious fusion of traditional Japanese flavors and classic waffles. These waffles are easy to make and are perfect for breakfast, or even dessert.

Ingredients
  

  • 2 ½ cups (315 grams, 11.11 ounces) glutinous rice flour (mochiko flour)
  • 2 tablespoons (20 grams, 0.71 ounces) matcha powder or to taste
  • ½ cup (110 grams, 3.88 ounces) granulated sugar
  • 3 teaspoons (10 grams, 0.35 ounces) baking powder
  • ½ teaspoon salt
  • 1 ½ cup (375ml/grams, 13.23 ounces) milk of choice room temperature
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your waffle iron. In a medium sized mixing bowl, combine the flour, matcha powder, sugar, baking powder, and salt.
  • Next, add the milk and vanilla to the bowl. Whisk together.
  • Whisk in the eggs, one at a time. Make sure there are no lumps in your mixture. Keep whisking until the mixture is all smooth.
  • Pour your batter into the hot waffle iron. Do not over fill your iron or it can spill over. Close the lid and allow to cook for 3 - 4 minutes (if using a Belgian waffle iron). If you are using a small waffle iron, cook your batter for 2-3 minutes.
  • Once cooked, carefully remove waffle from the iron using a fork.

Notes

  • If you find your waffle is sticking to your waffle iron, lightly grease it with some vegetable oil or butter. This will also make it easier to remove your waffles from the iron.
  • Do not over fill your waffle iron. When putting the batter in the waffle iron, fill to just below the top.
