Chocolate Rice Bubble Slice

Ingredients
  

  • 125 grams (4.41 ounces) marshmallows (white preferred) (see note 1).
  • 35 grams (1.23 ounces) butter, cubed
  • 2 ½ cups (75 grams, 2.65 ounces) rice bubbles (krispies)
  • ¾ cup (135 grams, 4.76 ounces) chocolate chips

Instructions
 

  • Grease and line a slice tin (19cm x 19cm, 7.48 inches x 7.48 inches) with parchment paper on the bottom and sides.
  • In a medium to large saucepan, heat the butter and marshmallows over low to medium heat until melted.
  • Turn off heat. Mix the rice bubbles and chocolate chips through the butter and marshmallow mixture.
  • Pour mixture into prepared slice tin. Press down the mixture using the back of a spoon or spatula to flatten the top and make it even. If you want the top of the slice to be smooth, simply place parchment paper on top and smooth the slice with your hands.
  • Allow to cool until the slice is at room temperature. Cut into 4cm x 4cm (1.57 inches x 1.57 inches) squares or a size of your liking. Serve.

Notes

  1. If you are using jumbo marshmallows, be sure to cut them into small pieces before adding them to the pan.
  • It is important to have all your ingredients measured out and prepared in advance. You will need to work quickly when adding the ingredients to the pot. As soon as the marshmallows and butter are taken off the heat and rice bubbles are mixed through, the slice will start to set.
  • To make it easier to clean your saucepan after use, soak it in hot water.
  • If you want to flatten the top of your slice, use the back of a spoon which has been dipped in hot water.
