Ingredients
  

  • 2 tablespoons cooking oil divided
  • 2 eggs beaten and lightly salted
  • 340 grams (11.99 ounces) spam diced
  • 1 teaspoon minced garlic
  • 3 cups (360 grams, 12.70 ounces) day old cooked basmati rice
  • 50 grams (1.76 ounces) frozen green peas defrosted
  • ½ cup (50 grams, 1.76 ounces) green (spring) onions finely chopped
  • Salt to taste

Instructions
 

  • Heat a wok or deep frying pan over high heat, add 1 tablespoon of cooking oil and pour in the beaten eggs. Scramble the eggs.
    Remove the eggs once cooked and set aside.
  • Add another 1 tablespoon of cooking oil to the wok. Add the diced spam to the wok. (see note 1). Cook the spam until it is golden brown, this could take 4 to 5 minutes.
  • Add the minced garlic, and mix through for 1 to 2 minutes.
  • Place the cooked basmati rice in the wok and mix through. Break up the rice if it is clumped together. Stir fry the rice for about 4 to 5 minutes.
  • Add the green peas, green onions, and eggs to the rice mixture. Mix until well combined. Turn off heat. Season with salt. Serve.

Notes

  1. Be careful when you add the spam as it can splatter. Slowly add it to the wok.
