  • Vegetable Oil: Or you can use any oil you prefer for frying.
  • Brown Onion
  • Chorizo: If you use fresh chorizo, you will need to remove the skin and mince it. If you use already cooked (dried) chorizo, cut it into slices.
  • Bacon
  • Minced Garlic
  • Mushrooms: I like to use button mushrooms.
  • Day old cooked basmati rice
  • Frozen Green Peas: Defrosted
  • Spring (green) onions
  • Salt

Instructions

This recipe for chorizo fried rice serves 4. The ingredients for this easy fried rice can easily be adjusted to suit how many serves you need to make.

Step One: If using fresh chorizo, peel the skin and mince the chorizo. If you are using dried chorizo, cut the chorizo into slices.

Step Two: Heat vegetable oil in a wok or deep frying pan over high heat. Once hot, add the finely chopped brown onion, chorizo, and bacon pieces.

Cook until the onion starts to brown and the chorizo and bacon starts to crisp.

Step Three: Add minced garlic and and mushrooms. Cook for a further 3 to 4 minutes or until the mushrooms have reduced and become a darker color.

Step Four: Add the cooked basmati rice. Break up any clumps of rice and stir through the meat and onions. Stir fry for 3 to 4 minutes.

Step Five: Add the green peas and spring (green) onions. Cook for a further 3 to 4 minutes.

Step Six: Season with salt to taste. Turn off heat and serve.

Tips for Success

  • Use high heat when making fried rice. This will cook the rice better.
  • If you find your ingredients sticking to your pan when cooking, add a bit more oil.

Storage

Once cooled, store this fried rice with chorizo in an air tight container in the fridge for 1 to 2 days.

To reheat, you could use a microwave or reheat in a frying pan or wok.

FAQ

Do you have to peel chorizo?

If you are using fresh (raw) chorizo, you will need to peel the skin.

If you are using already cooked (dried) chorizo, you usually don't need to peel the chorizo.

Can you fry chorizo slices?

Yes, you can fry chorizo slices. To do this, it is best to use a chorizo that is already cooked (dried chorizo).

This is because it is firmer and easier to use for slices. Fresh chorizo is usually used as a mince rather than as slices.

  • 2 tablespoons vegetable oil
  • Small (90 grams, 3.17 ounces) brown onion finely chopped
  • 1 (85 grams, 2.99 ounces) Chorizo fresh or cooked (dried)
  • 100 grams (3.53 ounces) Bacon cut into pieces
  • 1 teaspoon Minced garlic
  • 200 grams (7.04 ounces) mushrooms sliced
  • 3 cups (360 grams, 12.69 ounces) cooked basmati rice day old preferred
  • ⅓ cup (40 grams, 1.41 ounces) frozen green peas defrosted
  • ½ cup (40 grams, 1.41 ounces) spring (green) onions finely chopped
  • Salt to taste
