Ingredients for puffed rice granola
  • Honey or maple syrup
  • Neutral flavored oil, e.g. vegetable oil
  • Vanilla extract
  • Ground cinnamon
  • Ground nutmeg
  • Pinch of salt
  • Pepitas seeds
  • Sunflower seeds
  • Old fashioned oats (rolled oats)
  • Puffed rice: You could use rice Krispies (rice bubbles) for this recipe.

Instructions

This recipe for puffed rice granola serves 4 to 6 (it makes about 2 ⅓ cups, 215 grams, 7.58 ounces of granola). The ingredient quantities can easily be adjusted to suit how many serves you may need to make.

Step One: Preheat oven to 160°C (320°F) and line a large baking tray with baking paper.

Step Two: In a medium sized mixing bowl, mix the honey (or maple syrup), oil, vanilla extract, ground cinnamon, nutmeg and salt.

Step Three: Add the pepita seeds, sunflower seeds, oats, and puffed rice.. Mix until combined.

Step Four: Spread mixture onto prepared baking tray and bake in preheated oven for 20 to 25 minutes, or until golden and toasted. Halfway through baking, carefully stir the granola.

Step Five: Once baked, remove from oven and allow to cool completely.
