Ingredients

Ingredients for rice puff slice.
  • Dried Fruit of Choice: You could use your favorite dried fruits, like dried apricots, raisins, cranberries, or currants. Thinly chop them before use.
  • Nuts of Choice: Like pistachios, almonds, or cashews. Roughly chopped. If you don't want to use nuts to make this slice nut free, substitute with dried fruits.
  • Orange Zest
  • Puffed Rice: Also known as Rice Krispies or Rice Bubbles. Slightly crush your puffed rice before use.
  • Desiccated Coconut
  • All Purpose Flour: Also known as plain flour.
  • Caster Sugar: Super fine white sugar.
  • Thickened Cream: If you can't get thickened cream you could use heavy whipping cream.
  • Honey
  • Cooking Chocolate: You could use a block of cooking chocolate or chocolate chips. If using a block of cooking chocolate, chop into small pieces. You could use milk, dark, or white chocolate. Optional.

Instructions

This recipe for rice puff slice makes about 16 pieces. The ingredient quantities can easily be adjusted to suit how many you would like to make.

Step One: Preheat oven to 160°C (320°F) and grease and line a baking tray sized 18 cm x 27 cm x 2.5 cm (7.08 inches x 10.63 inches x 0.98 inches).

Step Two: Place thinly chopped dried fruit, chopped nuts, orange zest, crushed puffed rice, desiccated coconut, and flour in a large heat proof mixing bowl. Stir well until combined.

Mixing puffed rice, dried fruit, and nuts in a bowl with a wooden spoon.

Step Three: Place the cream, sugar, and honey in a small pot. Over low heat and stirring occasionally, cook until the liquid is smooth, glossy, and the caster sugar is completely dissolved.

Step Four: Carefully pour the cream, sugar, and honey mixture over the dry ingredients and use a wooden spoon or stiff spatula to mix it all together. Mix until all dry ingredients are evenly coated in the liquid.

Step Five: Place mixture in prepared baking tin. Flatten the top of the slice with the back of a spoon. If you find your slice is sticking to your spoon when you are flattening it, slightly wet the spoon with water.

Step Six: Place in preheated oven and bake for 10 to 15 minutes or until the top is golden brown. Once baked remove from oven and allow to cool completely.

If Using Chocolate

Step Seven: Chop the chocolate into small pieces and melt either in the microwave or using the double boiler method.

Step Eight: Spread melted chocolate on top of the cooled slice and allow to set. Once set, cut into pieces the size of your choosing. We like to cut our slices into 4 cm x 7 cm (1.57 inches x 2.76 inches) slices. This will make about 16 slices.

Substitutions / Variations

  • Nut-Free Version: For those with nut allergies, simply remove the nuts and increase the quantity of dried fruits to 90 grams (3.17 ounces) for added texture and sweetness.
  • Replace the nuts with a mix of seeds, such as pumpkin seeds, sunflower seeds, and chia seeds.
  • Citrus Twist: Experiment with different citrus zests like lemon or lime instead of orange zest.
  • Coconut Lovers: Boost the coconut flavor by adding ¼ teaspoon of coconut extract to the mixture.
  • Add a pinch of ground cinnamon, nutmeg, or cardamom to the dry ingredients.

  • 75 grams (2.65 ounces, 3 cups) puffed rice slightly crushed
  • 30 grams (1.06 ounces, ⅓ cup) desiccated coconut
  • 10 grams (0.35 ounces, 1 tablespoon) all purpose flour (plain flour)
  • 85 grams (2.99 ounces, ⅓ cup + 1 tablespoon) caster sugar super fine white sugar
  • 45 grams/ml (1.59 ounces, 3 tablespoons) thickened cream (or heavy whipping cream)

  • 250 grams (8.81 ounces) cooking chocolate of choice (you could use milk, dark, or white) (optional)
